Thank you so much for this recipe! All we had in the cupboard were a few tins of tuna, some courgettes and a bit of goat’s cheese and I found this recipe! The tuna makes a great addition.

I made this dish today and it was delicious. Everybody liked it. Courgettes are very cheap in Brasil so this recipe goes into the archive for future use.

I loved the look of this dish in the DMBLGIT contest- I have a dish entered as well and was scoping out the competition, haha. Just kidding, of course- but it was really fun to see what everyone entered and this dish looked like something I would love to try. Lately I’ve been experimenting with zucchini after a lifetime thinking I hated it, so I’m game to try it- especially with goat cheese. Yum! (Er, although with brown rice pasta, as I’m gluten free…)

Hi Kathryn – I’m glad you like it – it’s good to have something ultra quick and simple to make as we’re always busy hunting round the house for lost trainers/water bottles/numbers etc the night before!
Bea – I’ll have to come and have a look at your ink pasta version – I bet it looks stunning with your wonderful photographic skills :-)
Wendy – I was just thinking what an allotment/garden friendly recipe this was when I was writing it down (mint is so easy to grow too). I’m sure it will taste even better knowing that you’ve grown the veggies yourself!

A beautiful looking dish. My garden looks like it will be providing me with plenty of courgettes this year so all recipes including them are very welcome at the moment!

Love this dish. I made something somewhat similar with ink pasta ;-) And I know the feeling about getting the right food for your training. I used to compete in running ;-)
