Noticed a quince bush in my local park recently and have been wondering what to do with the fruit. There’s too much jam in my fridge already. This sounds perfect.

Once again I have to admit that I haven’t ever tasted quince. I don’t know whether they even grow here; I don’t even think I’ve seen them. I do read about them on blogs in California though, I know Christine from Christine Cooks uses them. Anyway, I have to just guess that it’s a variation of pear/apple type flavor which sounds like it would taste wonderful with pork. Great menu, and thanks for helping make the two year celebration so much fun!
