Such a lovely trio of vegetables to feature in this winter frittata. And I like your suggested substitutions. I'm always looking for new ways to learn to love brussels sprouts.
I echo Arwen -- I appreciate your detailed instructions. And I'll also echo Kathryn -- gorgeous photos.

A one pan supper? Oh yes indeedy, that is *exactly* what a frittata should be. Lovely recipe Sophie, you're a much more adventurous frittata maker than I am. I've never thought to use parsnip, or kale.
And that second image - of the frittata itself is gorgeous. Such beautiful colours. Your chooks are obviously producing lovely bright yolks.

The red onion is very pretty, and I like your careful instructions. It's nice to have a one pot meal, and I'm growing parsnip at the moment (even though it's summer).
